What I Made for Dinner…. Pass or Fail?

I was sick over Mothers Day weekend, so hubs aunt, who I love, brought us a full on ham dinner with all the fixins. Of course she will never take any home with her so we have a nice big ham for leftovers this week… and considering she is a culinary goddess you can rest assured it was the best ham I have ever tasted.

When she was here her and hubs were talking about making “ham and noodles” with the leftovers and I was intrigued. All it took was a bag of egg noodles, bite size cubes of the leftover ham, a small carton of sour cream and two eggs. What I got was the above. It congealed a little and looks a little funky but actually tasted OK…. So have any of you ever made this? Did yours get all curdled like this?

I still haven’t decided if this will be something I’ll add to my recipe file or not. P.S. I still have another half of a ham left… Ham Sandwiches anyone?

Key Lime Pie Deliciousness….


About three and a half years ago pre-little man, my two best girlfriends and I took an amazing trip to Key West, FL (even though two of the three of us were pregnant at the time) We ate all sorts of delicious things especially Key Lime Pie. I had it frozen on a stick, dipped in chocolate, and doused in whip cream… I was in love – with the island, the laid back lifestyle and key lime pie.

The other week, I was craving some key lime pie… I found a recipe online and away I went. The only problem was I didn’t have any sweetened condensed milk which led me to this post… once I made that, the rest was really simple. Just a few ingredients – one of which was Nelly and Joe’s Key West Key Lime Juice (where I actually had authentic key lime pie at;)
All you really need to make Key Lime Pie is a good graham cracker crust (I prefer homemade but this time I used a premade one:), some sweetened condensed milk, eggs, and Key Lime Juice.
I used the recipe HERE…. Just mixed together the eggs, sweetened condensed milk, and key lime juice… then poured it into the graham cracker shell and baked at 350 degrees for about 10 minutes!
The color was a bit off because of my homemade sweetened condensed milk but the taste was still delicious!

Cheeseburger Pie Recipe…. A new quick and easy dinner recipe:)

I found this recipe at Disney Family, however I tweaked it (as usual) to what I was looking for. A girlfriend of mine was over and told me about what she was making for dinner and I was intrigued. So here is my take on the Disney Family Anne Coleman Recipe for Cheeseburger Pie:

 

Cheeseburger Pie Recipe…. A new quick and easy dinner recipe:)

Recipe type: Entree
Prep time: 10 mins
Cook time: 15 mins
Total time: 25 mins
Ingredients
  • Premade Pie Crust Box of 2 (I used Bottom Dollar)
  • 2 Kosher Dill Pickles (medium size) chopped or sliced
  • 1 Tablespoon Pickle Juice from the pickle Jar
  • 1 Tablespoon of Water
  • 2 Tablespoon Ketchup
  • 2 Cups Shredded Cheddar Cheese
  • 2 Tablespoon Flour
  • 2 Tablespoon Milk
  • 1 lb of Ground Beef (I used Lauras Leen Organic)
  • 1 small sweet onion (about 1/3 cup chopped)
Instructions
  1. Preheat oven to 375 and unroll one of the pie crusts on the bottom of a pie plate.
  2. Prepare the beef, brown and drain
  3. Place the beef back in a skillet and add onions, pickle, ketchup, pickle juice, water.
  4. Sprinkle the mixture with flour and the milk, stir well.
  5. Take off of the heat and stir in the cheddar cheese
  6. Take the mixture and pour into the pie crust in the pie plate. Top with the second pie shell. Fold and crimp the two pie crusts together at the ends
  7. Cut slits in the pie crust (or you can use a cookie cutter like I did for little man – I used a fire truck cookie cutter)
  8. Bake for about 15-20 minutes or until crust is golden light brown

When it was done, I traced the fire truck out of the pie and gave it to little man. He went crazy!

Make Your Own: Sweetened Condensed Milk

Did you ever go in your pantry thinking you have something to make a recipe you were dying to make to find out you must have used the last of it??? It’s raining outside, it’s almost rush hour, and you have a kid napping so the last thing you want to do is run to the store. That was me the other day. I had acquired a bottle of Nelly and Joe’s Famous Key West Lime Juice and I was wanting me some key lime pie. I got all my ingredients together but I was missing the sweetened condensed milk… A little Googl-ing (is that a word) and I found a recipe to make your own sweetened condensed milk. Actually I found a couple different ways to make it. I chose the powdered milk version because it was faster:)

Make Your Own: Organic Sweetened Condensed Milk

Prep time: 2 mins
Cook time: 15 mins
Total time: 17 mins
Ingredients
  • 1/2 cup water (I had to about 2 TB of water in addition to this)
  • 1 1/8 cups powdered milk (I used an Organic Non-Fat Version from Queens in Allentown)
  • 1/2 cup white sugar (I used a raw sugar which is why mine turned out tan colored)
Instructions
  1. Stir all ingredients together. Put over medium heat and stir until it boils. You will have to CONSTANTLY stir it or it will burn on the bottom or make a caramel. Once it starts to bubble, lower the heat to the low setting and let it simmer (while constantly stirring) for about 10 minutes or until it gets thick.
  2. ** If you need a 14 oz. can you will need to double the recipe **

 

This is a really simple recipe! All you do is throw all the ingredients in a saucepan and bring to a boil

The key is to make sure that you are constantly stirring the mixture or it will burn or turn to caramel on the bottom. If you do manage to burn it a little (like I did) because the original recipe didn’t say to stir the whole time, I poured it into another pan (do not scrape the bottom or the chunks of burn will get in the mixture) and just reheat the mixture in that pan.

P.S. you will want to soak these pans right away or else they will make a mess! If you double the batch, it will make about a 14 oz can.

Make Your Own: Ice Cream Without an Ice Cream Maker

This was a recipe and idea I found on pinterest over at Two Little Hooligans blog HERE and just adapted it a little to our tastes. If you want a creamier, heavier ice cream – use cream. I used 2% Milk and it was more like a frozen yogurt consistancy. I also only added a Tablespoon of sugar, but you can add as little or as much as you want. If you want to flavor your ice cream, do it before you churn it. This is a great activity for rainy (or snowy days) and also for kids parties, too:)

Little Man loves his hand made ice cream and it’s a healthy snack, too:)

Frugal Holiday Recipes: Frugal and Fancy Ham

Did you ever look at those fancy hams in the grocery store or in the Williams Sonoma magazine and you are almost half tempted to spend the $80 so you can enjoy the deliciousness??You know those hams that are perfectly glazed and spiral cut with pineapples lining the outside.

Here is our family’s way of making ham that is mouth watering. My hubs ham can beat any of those honey glazed baked concoctions.

We start with just the cheapest ham on the bone. Hubs puts it in the Nesco Roaster on a riser (not directly in the juices).

He then takes brown sugar and uses it like a rub on the outside of the ham. If you want to get all fancy, you can place pineapple slices with toothpicks on the outside. 

He mixes maple syrup – the real stuff, brown sugar and a little warm water and lets it dissolve in a bowl and then uses an injector to infuse that throughout the ham…The rest of the mixture, just goes in the bottom of the ham.

Then you cook on 350 in the roaster (or crockpot) – times will vary due to the weight/size of the ham…

When you cut the ham, place on the plate and spoon the juice from the bottom of the pan all over it… You can always make a glaze, but you don’t really need it.

 

This week you can pick up a regular ham for $.99 a pound at Bottom Dollar and around $1.19 a pound at the Giant. This year we splurged a little as hubs scored a Free Turkey or Ham Certificate courtesy of The Sands Casino. He stopped by last week and used his $10 free credit.

Holiday Dinner Turkey vs. Ham…. What’s on your table???

Hubs will not compromise with me, I want a turkey, he wants a ham. He says that’s ham is the meal that you eat for Christmas but I have to wonder, where did the tradition come from???

There seems to be some debate on the issue as some say it came from Germans and some say it came from the English…

Long story short, hubs won the battle and I will be buying a ham to make this weekend:)
