This is an amazing prize courtesy of Sands Casino Resort Bethlehem! I am really excited to be able to give this to one of my readers! Thanks Sands!

Hubs and I treated ourselves to a dinner out at Emeril’s Italian Table a few months ago and we had a great time:) With little man and budget constraints we rarely get a night out on the town, however, we jumped at the chance to try something new and have a much needed date night. The restaurant is a little more casual than the Chop House and serves traditional Italian meals with a twist.

I had the Gulf White Shrimp and it was delicious and hubs had the Osso Bucco. It’s one of his favorite dishes that his aunt makes. He loved it (but shhhhh don’t tell his aunt). We took a Tiramisu to go for Grammie who was watching little man for us (she looooved it). I felt the Prices were reasonable. I have spent more at Italian chain restaurants that are lacking the authenticity of real Italian food (who shall remain nameless:). This gift certificate will definitely get you a great dinner and desert (and probably more:).

Mothers Day Gift Guide: T-Fal Actifry Review and Giveaway

Last week I was so excited to be able to try the T-fal ActiFry to cook our family meals in a healthy way. I was sent the T-fal ActiFry to try out and share my experience.

It showed up at the best possible time as I was completely overwhelmed last week and needed some help making quick and easy meals that didn’t require a lot of cleanup. Mostly because I had no hot water to wash dishes with (long story) or had no access to my pantry downstairs (even longer story).

The T-Fal ActiFry has pulsed hot air and a paddle that constantly stirs the ingredients, which makes for easy cooking and even easier to clean up! In fact, you can enjoy items that would normally be fried, in a healthy way. It takes a tablespoon of oil (or less) to prepare food, even fried foods.

I made a bolognese sauce, browned ground beef, made a stir fry, and sweet potato fries all with little cleanup (I just put the insert in the dishwasher:). I loved the fact that I can make a dish from start to finish in the ActiFry so that means not a lot of cleanup. Since it has a paddle that stirs, I didn’t have to hover over the stove and continuously stir the food as it was cooking. Plus with a little man running around in the kitchen, I don’t have to worry about pots and pans on the stove. I set the ActiFry on the counter out of his reach. I also liked the fact that since it constantly stirs the food, you can set the timer on the device and do other things. Multitasking in my kitchen is key, but I usually forget to stop and stir, so I have burnt food on occasion. I can see how ActiFry can replace a few appliances in your (or your mom’s kitchen). This would make a great Mothers Day gift!

Here are some pictures (above) from me making some sweet potato fries last week. I used about 1/4 of a tablespoon of oil for the entire bag and they were crispy and crunchy like deep fried french fries. I love how you can make fried foods the healthy way. I usually cook those type of foods in the oven, however, you miss the taste and “crunch” of a fried food. You can take a whole potato, cut it up and make homemade fries, potato wedges, etc. You can make stirfry easily. I also used it to make a big batch of ground beef and then used some of the ground beef to make a bolognese sauce below and put the rest in the freezer for taco’s later. The recipe booklet that comes with the ActiFry is filled with many great, healthy and easy recipes, even desserts!

Quick, Easy, Cheap Meal with Gorton’s and a Giveaway

I love to make meals from scratch but sometimes there is too much going on or this week since my back is out I didn’t feel like slaving over a hot stove. I looked to my freezer and pantry for something to throw together.

Gortons had provided me with some of their products to try out, so I popped out the box of Lemon Pepper Grilled Fish Fillets. Hubs loves these. I also took out some linguine pasta, a lemon, garlic, and butter.

First I put a pot of boiling water with salt in it. In case you ever wonder how much salt to use, I will quote my husbands Nanny Finelli “Salt your pasta water to the consistancy of the sea”.

I put the fillets on a baking sheet in the oven while the water was boiling and chopped up 3 cloves of garlic and set aside.

Also while the water was boiling I put a stick of butter in a saucepan until it melted and then added the garlic until it was soft (not brown – it gets bitter when it’s brown). Once the butter was melted I dropped it on low heat.

Add the pasta to the boiling water. When the pasta is done, drain and add the butter/garlic mixture to the pasta. Squeeze 1/2 lemon (through your fingers or a strainer to catch the seeds) into the pasta. Toss all together. Plate the pasta

Flake the fish with a fork and add to the top of your pasta. I used 1/2 fillet for each. It served four adults.

Why I heart the Rubbermaid Hidden Recycler and a Giveaway

Disclosure: Rubbermaid has provided me with a Hidden Recycler for the purpose of this review and will be sending one to my readers in a giveaway . I am not paid by Rubbermaid for the review or giveaway. All opinions are 100% Mine.

When Rubbermaid asked me to review their new product, the Rubbermaid Hidden Recycler, I thought this would be a great way to see if there was an easier and more organized way to recycle in our house. Currently, we rinse the item out, we sit it on the window sill above the sink or we line it up in our pantry on a shelf until we get enough things to walk out to the recycling bin. It’s not like our recycling bin is a mile away, it just usually happens to be at night and cold and I don’t feel like putting shoes on and going out in the cold. Wow, that sounds lazy when I said it. I can ensure you I am not lazy… I just hate the cold and the dark. With the big organization project in the pantry, I wanted to avoid having empty cans and bottles lying around there and my Rubbermaid Hidden Recycler came just in time!

It was easy to put together and fits nicely under the sink or in another cabinet. Since I have pull out drawers, the recycler didn’t work on my cabinet as you can see above, but it did fit nicely in the pantry and hung from one of the rails that are in there. I also tried it out on our back porch which is where we live in the spring/summer/fall. A lot of times we will have get togethers or sit out there to eat or drink so it made sense to try it out there where people can just put their cans and bottles in. The cool thing about the recycler is when you hang the base, it stays put and you can lift out the handled liner and carry it to the large recycling bin. The liner is waterproof, so if you do have something that leaks or it gets wet, it can be easily washed or wiped out.

Outlet Shopping in the Lehigh Valley is Finally Here at Sands Bethlehem & a Giveaway!

Hubs and I have visited Sands Casino in Bethlehem a few times and have anxiously been awaiting the arrival of all the outlet shops. I love outlet shopping because if you are trying to get brand name items on a budget, you can find some great deals there. It’s even better when it’s located in the Sands Bethlehem complex because you can take advantage of the casino and their amazing restaurants while you are there. Now you don’t have to drive hours for your favorite outlet stores. They are right here in the Lehigh Valley!

The Shoppes at Sands now has Coach Factory outlet, Nine West Outlet, DKNY, Chico’s Outlet, Talbots Outlet, and more! We stopped in to check out The Old Farmers Almanac General Store when it opened a few months back and it was really cool. There is something for everyone there from home decor, to canned goods, and even accessories like purses and luggage.

What else is new and exciting at Sands Bethlehem?

The Sands Bethlehem Event Center, which is set to open in May, will offer performances by the biggest names in music, comedy, sports such as boxing, and much more. Here are the first few concerts that have been announced:

Elmo is Coming to Stabler Arena and You Can Win Tickets!

Elmo, Abby Cadabby and friends as the stage lights come up on Sesame Street Live “1-2-3 Imagine! with Elmo & Friends” at Stabler Arena in Bethlehem. We are so excited as we LOVE Elmo at our house. Stabler will be hosting Elmo and his friends from Friday, April 6th – Saturday, April 8th. Little Man and I will be going Friday night and tweeting live from the event! What’s even cooler? There is a Play Zone at Sesame Street Live – a fun new way for children to experience their favorite street! Imagine your child sitting in Big Bird’s nest, popping up in Oscar’s trash can, twirling in Zoe’s dance studio or visiting Elmo’s World. I wonder if there is a height/age requirement. I’m not sure who is more excited about the show and Play Zone – me or little man?
